{"id":8365,"date":"2024-06-25T16:51:51","date_gmt":"2024-06-25T16:51:51","guid":{"rendered":"https:\/\/fmf-old.abidesites.com\/?post_type=recipes&#038;p=8365"},"modified":"2025-09-05T22:43:08","modified_gmt":"2025-09-05T22:43:08","slug":"oatmeal-butternut-cookies","status":"publish","type":"recipes","link":"https:\/\/fmf-old.abidesites.com\/?recipes=oatmeal-butternut-cookies","title":{"rendered":"Oatmeal Butternut Cookies"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-8425 \" src=\"https:\/\/fmf-old.abidesites.com\/wp-content\/uploads\/2024\/05\/3-e1719334044495-560x996.png\" alt=\"stack of oatmeal butternut squash cookies drizzled with icing\" width=\"325\" height=\"578\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><!--WPRM Recipe 8366--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Oatmeal Butternut Cookies<\/h2>\n<p>\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/fmf-old.abidesites.com\/wp-content\/uploads\/2024\/05\/1-150x150.png\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>1 1\/4 cup (285g) Farmer&#039;s Market Food&#039;s Organic Butternut Squash Puree<\/li>\n<li>1 cup (226g) butter, softened<\/li>\n<li>2 cups (170g) old-fashioned whole rolled oats<\/li>\n<li>1 2\/3 cup (209g) all-purpose flour<\/li>\n<li>1  tsp baking soda<\/li>\n<li>1\/2 tsp salt<\/li>\n<li>2 tsp ground cinnamon<\/li>\n<li>1 tsp ground ginger<\/li>\n<li>1 cup (200g) granulated sugar<\/li>\n<li>2\/3 cup (135g) packed dark brown sugar<\/li>\n<li>1 each egg yolk, room temperature<\/li>\n<li>2 tsp pure vanilla extract<\/li>\n<li>zest of one orange<\/li>\n<li>1  cup chocolate chips, chopped nuts, dried cranberries or raisins (*OPTIONAL*)<\/li>\n<\/ul>\n<h4>Optional Icing<\/h4>\n<ul>\n<li>1 1\/2  cup (180g)  powdered sugar<\/li>\n<li>2 tbsp (45ml) milk<\/li>\n<li>1 tbsp pure maple syrup<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<h4>Oatmeal Butternut Cookies<\/h4>\n<ol>\n<li>\n<p>Squeeze out the excess liquid from the butternut puree.\u00a0Line a medium bowl with 2 paper towels. Scoop out the butternut puree onto the towels. Place another paper towel on top and squeeze on excess moisture. After blotting, you should have about 1 cup (225g) of butternut puree.<\/p>\n<\/li>\n<li>\n<p>In a medium bowl, whisk together the oats, flour, baking soda, salt, cinnamon, and ginger.<\/p>\n<\/li>\n<li>\n<p>Preheat oven to 350\u00b0F (177\u00b0C) and line two\u00a0large baking sheets with parchment paper or silicone baking mats. Set aside.<\/p>\n<\/li>\n<li>\n<p>In a mixer, paddle the softened butter with the sugars untillight and fluffy. Scrape down the bowl.<\/p>\n<\/li>\n<li>\n<p>Add in the egg yolk and vanilla extract until combined, followed by the butternut squash puree. Scrape down the bowl. Slowly add in the dry ingredients until combined and a dough forms. Add in mix-ins of choice if doing so. Mix again just to combine.<\/p>\n<\/li>\n<li>\n<p>Using a medium cookie scoop, scoop cookie dough into ballsand place 2-3 inches apart on the baking sheet. Slightly flatten the balls out\u2013 they won\u2019t spread very much in the oven!<\/p>\n<\/li>\n<li>\n<p>Bake for 12\u201315 minutes or until lightly browned and set on the edges. Remove from the oven and allow to cool. <strong>Optional Icing: <\/strong>Whisk together the ingredients for the icing and dip or drizzle cooled cookies with the icing.
