{"id":4167,"date":"2013-02-20T00:08:54","date_gmt":"2013-02-20T00:08:54","guid":{"rendered":"https:\/\/fmf-old.abidesites.com\/?post_type=fmf_recipe&#038;p=4167"},"modified":"2019-01-17T16:45:16","modified_gmt":"2019-01-17T16:45:16","slug":"pumpkin-curry-with-tempeh-spinach","status":"publish","type":"recipes","link":"https:\/\/fmf-old.abidesites.com\/?recipes=pumpkin-curry-with-tempeh-spinach","title":{"rendered":"Pumpkin Curry with Tempeh &#038; Spinach"},"content":{"rendered":"<p><!--WPRM Recipe 5787--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Pumpkin Curry with Tempeh &amp; Spinach<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n\t\tVegetarian, gluten-free curry recipe that&#8217;s bursting with flavor.&nbsp; If you have not tried pumpkin curry before, you need to do it as soon as possible.&nbsp; It&#8217;s fantastic.&nbsp; Use more vegetable broth or pumpkin to reach desired curry consistency.\t<\/p>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>1 teaspoon sesame seed oil<\/li>\n<li>1 small onion (chopped)<\/li>\n<li>2 garlic cloves (peeled and chopped)<\/li>\n<li>2 tablespoons fresh ginger (peeled and chopped)<\/li>\n<li>1\/2 cup coconut milk<\/li>\n<li>1\/2 cup vegetable broth<\/li>\n<li>1\/2 cup Farmer&#039;s Market pumpkin puree<\/li>\n<li>1 package Tempeh (chopped)<\/li>\n<li>1 tablespoon curry powder<\/li>\n<li>1 teaspoon corriander<\/li>\n<li>pinch of turmeric<\/li>\n<li>1\/2 teaspoon red pepper flakes<\/li>\n<li>1 10 oz. bag Stahlbush Island Farms frozen Spinach (thawed)<\/li>\n<li>1 tablespoon freshly squeezed lemon juice<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>\n<p>Heat the olive oil in a large skillet. Add onions and saute for about 3 minutes. Add the garlic and ginger and saute for about another 2 minutes or until the onions are translucent.&nbsp;<\/p>\n<\/li>\n<li>\n<p>Pour in the chicken broth, pumpkin, and coconut milk. Stir in the seasonings and bring to a boil.&nbsp;Reduce heat to low and add the tempeh, spinach, and lemon juice.&nbsp;Continue to simmer for about 15 &#8211; 20 minutes or until flavors have blended.
