{"id":134,"date":"2012-06-21T21:58:48","date_gmt":"2012-06-21T21:58:48","guid":{"rendered":"https:\/\/fmf-old.abidesites.com\/?post_type=fmf_recipe&#038;p=134"},"modified":"2019-04-22T18:59:25","modified_gmt":"2019-04-22T18:59:25","slug":"sweet-potato-souffle","status":"publish","type":"recipes","link":"https:\/\/fmf-old.abidesites.com\/?recipes=sweet-potato-souffle","title":{"rendered":"Sweet Potato Souffle"},"content":{"rendered":"<p><!--WPRM Recipe 5940--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Sweet Potato Souffle<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>1 cup Farmer&#039;s Market Foods Organic Sweet Potato<\/li>\n<li>1 tbsp butter, plus more for souffle dish<\/li>\n<li>pinch of sugar (for souffle dish)<\/li>\n<li>2 tbsp all-purpose flour<\/li>\n<li>1\/2 cup whole milk<\/li>\n<li>3 large eggs, room temperature, separated<\/li>\n<li>1\/4 cup maple syrup<\/li>\n<li>1\/2 tsp ground nutmeg<\/li>\n<li>salt<\/li>\n<li>whipped cream, optional<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>\n<p>Preheat oven to 375 F. Butter a 1 1\/2 quart souffle dish, and dust with sugar.&nbsp;<\/p>\n<\/li>\n<li>\n<p>In a medium saucepan, heat butter over medium heat. Add flour, and stir until golden, about 2 minutes. Gradually whisk in milk and simmer, whisking constantly until thickened, about 1 minutes.&nbsp;<\/p>\n<\/li>\n<li>\n<p>Remove from heat, and mix in sweet potato and egg yolks. Stir in maple syrup and nutmeg, and set aside.&nbsp;<\/p>\n<\/li>\n<li>\n<p>Using an electric mixer, beat egg whites with a pinch of salt until stiff peaks form. Whisk 1\/4 of whites into sweet potato mixture ; using a rubber spatula, gently fold in remaining whites.&nbsp;<\/p>\n<\/li>\n<li>\n<p>Pour mixture into prepared dish, placed on a rimmed baking sheet. Bake until puffed, 35-45 minutes.
