{"id":119,"date":"2012-06-22T21:29:10","date_gmt":"2012-06-22T21:29:10","guid":{"rendered":"https:\/\/fmf-old.abidesites.com\/?post_type=fmf_recipe&#038;p=119"},"modified":"2019-04-19T19:41:23","modified_gmt":"2019-04-19T19:41:23","slug":"pumpkin-curry","status":"publish","type":"recipes","link":"https:\/\/fmf-old.abidesites.com\/?recipes=pumpkin-curry","title":{"rendered":"Pumpkin Curry"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><!--WPRM Recipe 5923--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Pumpkin Curry<\/h2>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>2 skinless chicken breasts (or extra-firm tofu)<\/li>\n<li>1 tbsp olive oil<\/li>\n<li>1 cup Farmer&#039;s Market Foods Organic Pumpkin<\/li>\n<li>1 tbsp butter<\/li>\n<li>1 onion chopped<\/li>\n<li>2 cloves garlic, chopped<\/li>\n<li>1 inch piece fresh ginger, peeled and grated<\/li>\n<li>1 tbsp ground coriander<\/li>\n<li>1 tbsp ground cumin<\/li>\n<li>1 pinc turmeric<\/li>\n<li>1  tsp red pepper flakes<\/li>\n<li>1\/2 cup canned coconut milk<\/li>\n<li>1 1\/2 cup  chicken or vegetable broth<\/li>\n<li>salt and pepper to taste<\/li>\n<li>parsley for garnish<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>\n<p>Season the chicken with salt and pepper.<\/p>\n<\/li>\n<li>\n<p>Heat the olive oil in a large skillet over medium heat. Add chicken to the skillet; cook and stir until browned on the outside and cooked through. Remove from heat and set aside.&nbsp;<\/p>\n<\/li>\n<li>\n<p>Melt the butter in a separate skillet over medium heat, and saute onion, garlic, and ginger; cook until the onion is translucent. Season with coriander, cumin, turmeric, and red pepper flakes.<\/p>\n<\/li>\n<li>\n<p>Continue to cook and stir until spices are fragrant. Add pumpkin, cooked chicken, coconut milk, and chicken broth. Season with salt to taste.
