Sweet Potato Pancakes
- 1 can Farmer's Market Foods Organic Sweet Potato
- 1 1/2 cup all-purpose flour (sifted)
- 3 1/2 tbsp baking powder
- 1 tsp salt
- 1/2 tsp ground nutmeg
- 2 eggs (beaten)
- 1 1/2 cup milk
- 1/4 cup butter (melted)

Sift dry ingredients into a mixing bowl.

Combine remaining ingredients; add flour to mixture, stirring until just dry ingredients are moistened. Drop tablespoons of mixture onto hot greased griddle and fry, turning once, until browned on both sides.
